Ingredients
    Chicken Cacciatore
  • 2 pounds chicken breasts (boneless, skinless), cut into pieces
  • 1 onion, thinly sliced
  • 2 bell peppers (red and green), slicedbell peppers (red and green), sliced
  • 2 cloves garlic
  • 1 zucchini, sliced
  • 1 cup mushroom
  • 1 can diced tomatoes, no salt added
  • 1 can tomato paste, no salt added
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Salt (optional) and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Chicken Marinade
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar or red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon tablespoon Italian seasoning (or a mix of dried oregano, basil, and thyme)
  • 1/2 cup lemon juice
  • Salt and pepper to taste
Instructions
  1. Place the sliced onion, bell peppers, garlic, zucchini, and mushrooms in the bottom of the slow cooker.

  2. Add the chicken pieces on top of the vegetables.

  3. Pour the diced tomatoes and tomato paste over the chicken and vegetables.

  4. Sprinkle the oregano, basil, thyme, salt (if using), and pepper over the top.

  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and the vegetables are cooked through.
